Tuna Scoops

INGREDIENTS:
1 can of tuna
1/2 shredded carrot
1/4 diced green peppers
1/4 diced red peppers
1/4 diced scallions
3 sheets of lettuce
1/4 teaspoon flax seed
1/4 diced tomatoes
black pepper
red vinegar
DIRECTIONS:
Heat up a skillet, add some extra virgin olive oil and crushed garlic. Then, add the shredded carrots, diced tomatoes, diced scallions, diced red peppers and diced green peppers. Stir it for about 2 minutes, then add the tuna. Let it sit for 4 minutes, then stir it again and add the black pepper, flax seed and red vinegar. Cook it for another 5 minutes. Then stuff each sheet of lettuce with a spoonful of the tuna mixture. Enjoy!
